A Veggie Meal


Quick picture of a great Mediterranean recipe from Morning Star Farms using their 'Chicken' Starters. I had Kalmata olives with it. It was outstanding!! BUT, it says to use artichoke hearts (one jar) but never tells you in the recipe when to add them! It was pretty much a no brainer, but you'd kind of think a big company like Morningstar Farms would proof read or test their recipes maybe??

Spring has Sprung!!




Just two spring pictures of the mountain as seen from our side door. These pictures were taken less than a week apart. Spring just exploded! Of course that means everyone you see has a runny nose and scratchy voices from the tree pollen, but boy, it's nice to not see dead looking vegetation!! Enjoy!!



I'm not sure what this pink tree is, but it's just crammed with flowers! Must be honey bee heaven!! And the forsythia bush that exploded a few days ago. Now it's going to green leaves.




And lastly some pics of our Easter baskets that Paden and I gave each other. So cute!! I found a basket for him with motorcycles on it!!
Also some pictures I took at church of the Easter flowers. I bought one of the hyacinths in memory of Beau and it was all yellowed on the leaves and the flowers were half dead! It lasted almost three days and died. And it wasn't cheap! Paden bought me a hyacinth for Easter for a couple dollars and it's still going and smelling wonderful after two weeks! I wasn't happy about that! Sorry Bear....
I noticed on the way out the beautiful stained glass window as I was leaving church, so I quick snapped a picture of it. It was nice how the sun was shining through it

Some Yummy Veggie Meals!!




Here are some great vegetarian/vegan meals we've made lately! The top left picture is a wonderful Frito Pie!! Oh, it was heavenly!! The recipe was from an online vegan group.
Picture two is stuffed shells. The recipe was from Vegan with a Vengance and was sadly VERY bland!!! I added garlic, Italian seasonings, basil, parsley and more garlic and next time will use a spaghetti sauce instead of just tomatoe sauce. PLUS the recipe calls for a whole box of large shells, but the tofu mixture for the filling only fills half the shells! So, now I have a freezer bag full of the other half of the shells. Rather disappointing, but better with lots of seasoning!
The picture below is a Shepherd's Pie from The Moosewood cookbook. Fabulous!!!! Those are mashed red potatoes on the top. Paden made it and it was wonderful!!
Must go look for recipes for the Easter family gathering. I'm thinking I'll take broccoli slaw with pineapple, apple, raisins and sunflower seeds and a pasta salad with veggies. Yum.... :) Namaste!!
